Homemade bagel
Ingredients
- 250 g of our plain bread mix
- 10 g of fresh yeast (gluten-free)
- 12.5 cl of lukewarm water
- 1 egg
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 tablespoon of honey
- Seeds of your choice (poppy, sesame, sunflower)

Step 1
Dissolve the fresh yeast in 5 cl of lukewarm water and let it activate for 5 minutes in a large bowl.
2nd step
Mix the remaining ingredients and add the yeast.
Step 3
Knead for a few minutes. Form 6 small balls of about 100g each, then make a hole in the center and gradually widen it.
Step 4
Preheat the oven to 210°C. Boil a large pot of water with a tablespoon of honey. When the water is simmering (but not boiling), poach the bagel buns in batches of 2, depending on the size of your pot. When they rise to the surface, remove them from the water and set them aside on a wire rack.
Step 5
Brush the buns with beaten egg yolk and sprinkle with seeds of your choice.
Step 6
Bake for 30 minutes until your breads are golden brown.
