Charlotte with Red Fruit Madeleines

Ingredients

  • 10 Madeleines Almond Céliane
  • 250 g strawberries
  • 250 g raspberries
  • 8 cl of almond milk
  • 45 g of cane sugar
  • 5 g of agar-agar
  • 500 g vanilla soy yogurt

- Preparation -

Step 1

On the edge of a 20 cm diameter springform mold, place the Almond Madeleines , with the bump facing inside.

2nd step

Mix the hulled strawberries and raspberries.

Step 3

Mix the milk with the sugar and the agar-agar. Add the fruit coulis. Heat and simmer for 1 minute.

Step 4

Pour into a salad bowl and gently incorporate the soy yogurt. Pour immediately into the mold.

Step 5

Leave to rest for 2 hours in the refrigerator. Gently unmold and serve, garnishing with small fruits.

Step 6

Leave to cool for 3 hours in the refrigerator before serving. Sprinkle the cheesecake with lime zest. Decorate with a few milk sticks. You can serve the cheesecake with a lemony mango coulis.
