Coconut tiramisu
Ingredients
- 8 Céliane speculoos biscuits
- 80 g of coconut milk
- 25 g of cane sugar
- 2 eggs
- 1 cup of coffee
- Dark rum
- Grated coconut
- Preparation -
Step 1
In a bowl, beat the egg yolks with the sugar.
2nd step
Add the coconut milk and a little rum, mix well. Tip : take the coconut milk out of the refrigerator before cooking, it will be easier to mix.
Step 3
Beat the egg whites until stiff then add them to the rest of the preparation.
Step 4
Quickly soak the speculoos in hot black coffee until they are well soaked. Tip : Don’t let the cookies melt in the coffee!
Step 5
Individual serving: Place the soaked biscuits at the bottom of a ramekin and cover with the mixture. Sprinkle with grated coconut. Tip : To serve in a dish: repeat the operation twice and sprinkle with coconut at the end.
