Banana Bread
Ingredients
- 180 g of Céliane Pastry Mix
- 50 g of almond powder
- 3 tsp of chia seeds and 3 times their volume in water
- 4 ripe bananas + 1 for decoration
- 3 tablespoons of coconut oil
- 1 vanilla pod
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp of maple syrup (for those who are not used to sugar-free cakes)
- Preparation -
Step 1
Preheat your oven to 170°C in fan mode. Pour your chia seeds into a cup. Add three times the number of spoons of water (so nine) and let them swell.
2nd step
In a large bowl, start by mashing the bananas. Then add the coconut oil. Tip : if it has frozen in your cupboard, simply put it near your oven which is heating to return it to its liquid form. Mix everything.
Step 3
Pour in the spices. For the vanilla, simply split it in half lengthwise. Open it and scrape it with the knife.
Step 4
Add the pastry mix and the almond powder. All you have to do is mix everything to obtain a nice dough. Pour it into your mold.
Step 5
Cut a banana in half lengthwise and place it on top to decorate.
Step 6
Bake for 40 to 50 minutes.
