Marbled rock glaze

Ingredients

  • 70 g dark chocolate
  • 30 g butter
  • 5 cl of liquid cream
  • 100 g of sugar
  • 5 egg yolks
  • 100 g of Céliane pastry mix
  • 1/2 sachet of gluten-free yeast
  • 5 cl of vanilla

    Icing
  • 40 g of hazelnuts
  • 220 g of chocolate
  • 50 g of neutral oil

- Preparation -

Step 1

Preheat the oven to 160°C.

2nd step

Mix the egg yolks and sugar. Add the melted butter and single cream.

Step 3

Add our Celiane pastry mix and gluten-free yeast.

Step 4

For the plain dough, add the vanilla, for the chocolate dough, add the melted chocolate.

Step 5

In a cake tin, first place the plain batter, then the chocolate batter.

Step 6

Using a spatula, fold the plain mixture over the chocolate mixture to create a marbled effect. Bake for 45 minutes.

Step 7

Blend the hazelnuts, then add the melted chocolate and neutral oil. Once mixed, wait for the cake to cool before serving.

Step 8

Once the cake is iced, place it in the refrigerator for at least 1 hour so that the icing hardens.
