Tiramisu madeleines with strawberries

Ingredients

  • 6 Madeleines Almond Céliane
  • 40 ml of water
  • 350 g strawberries
  • 50 g of cane sugar
  • 4 whole eggs
  • 250 g of mascarpone

- Preparation -

Step 1

Mix 100 g of strawberries with the water and 2 tbsp. to s. sugar and set aside.

2nd step

Dice the remaining strawberries and set aside.

Step 3

Separate whites from yellows. Mix the egg yolks and sugar, then add the mascarpone.

Step 4

Beat the egg whites until stiff. Gently incorporate the egg whites into the mascarpone mixture.

Step 5

In 6 glasses, put a base of mascarpone cream, crumble an Almond Madeleine on top, sprinkle with strawberry coulis, distribute the diced strawberries, then cover with mascarpone cream.

Step 6

Reserve in the refrigerator for at least 2 hours before serving.
